Easter eggs all gone? Try this recipe instead!
Sometimes you need a snack and a piece of fruit or veg stick + dip just isn't going to cut it. This is a great recipe if you are looking for something sweet and satisfying.
Ingredients:
120 g fresh pitted dates
1 cup rolled oats
1/2 cup desiccated coconut
1-2 tablespoons cacao nibs
150 g nut butter (your choice, but I usually use a combination of Tahini and Peanut butter)
A little water to mix if needed
Method:
Combine dates, oats and coconut into a food processor or blender.
Mix through until the mixture goes crumbly.
Remove the mixture and place into a large bowl.
Add the cacao nibs.
Add the nut butter and mix through until combined. Add more water if needed to mix into a dough.
Scoop out 12 portions, roll into balls and roll in your choice of chopped nuts, granola or desiccated coconut.
These can be stored in the fridge for up to 7 days. However, I keep a few out then freeze the rest. I like to eat them straight out of the freezer (perhaps that is weird but it's how I enjoy them....you can let me know your thoughts!) Also, I find keeping them in the freezer keeps them out of sight so I don't eat the whole batch in the first day :)
